With lingering memories of Mardi Gras still on the brain, students can relive the Louisiana experience with one of Springfield's own local Cajun restaurants, the Big Easy Grill.
Springfield is full of so many different types of restaurants, it's easy to find something to suit any taste.
Of course, sometimes finding a unique restaurant isn't always the easiest task, especially when most chain restaurants seem to have the same dishes with just a different name.
Big Easy Grill is an independently owned restaurant which boasts a wide selection of cuisine consisting of different tastes from around the world.
The Big Easy Grill, a locally owned Cajun restaurant, serves up a combination of seafood, gumbo and jambalaya and will satisfy anyone's craving for some good old southern cooking.
Hank Visio, owner of the Big Easy Grill, first opened the restaurant almost two years ago.
Originally born in the South, Visio said he first started the restaurant because he wanted a place that served the type of food he likes. The menu consists of different traditional southern cuisine.
Visio named his restaurant the Big Easy Grill after, of course, New Orleans. The different dishes on the menu are from his own recipes, which he's had time to tweak over the years.
"Some of these recipes aren't even written down," Visio said.
Paul Ackerman, junior in marketing and a waiter at Big Easy, said he has liked working at the Grill. Because it is a smaller establishment, the atmosphere is laid back, a place where everybody knows everybody.
Although it may not have received a lot of business from students when it first opened, the Big Easy is gaining popularity.
In addition to its more relaxed atmosphere, the Big Easy plays blues music in the background to enhance the Southern feel.
Ackerman said when he first started working at the Grill, he didn't know anything about Cajun food, but after gradually trying more and more, he's now obsessed with it.
